Description

The ancient Greeks were lovers of lentil soup, as attested to by a comment by Aristophanes: "You, who dare insult lentil soup, sweetest of delicacies."

Recipe Directions

1. Slice the onion, celery, and carrots. Mince the garlic and rinse the lentils.

2. Heat up the olive oil in a big pot.

3. Add the onion, celery, and carrots to the pot and sauté them, stirring occasionally, until the vegetables become soft.

4. Drop in the garlic, and continue sautéing for another minute to release the flavor.

5. Sprinkle some salt and pepper, as desired.

6. Now that it's time for the main part, add the lentils and canned diced tomatoes.

7. For flavor, add the bay leaves, paprika, oregano, and red pepper flakes.

8. Top off with water.

9. Stir everything until it's nicely mixed. Cover the pot and bring to a boil, which will take about 15 minutes. Lower the heat to maintain a simmer for about another 15 minutes, until the vegetables are soft.

10. Taste the soup (without burning yourself) and add more salt and black pepper, as desired.

11. If you like, you can add vinegar and spinach, stir, and wait about 3 minutes until the spinach is wilted.

12. For a thicker consistency, you can blend some of the soup in a blender and stir it back into the pot.
