Recipe Directions

1. Start by rinsing the beans, then soak them for at least an hour.

2. Once that's almost done and you're ready to start cooking, it's time to cut the vegetables. Finely chop the cabbage. Slice the carrots. Cut the potatoes into cubes. Slice the celery. Chop the onion. Lastly, slice the zucchini.

3. Get a stock pot and drop in the canned tomatoes, cabbage, carrots, potatoes, celery, onion, vegetable cubes, and Italian seasoning.

4. Top off with water.

5. Bring to a boil, then turn down the heat to maintain a simmer for 15 minutes.

6. Next, add the beans, corn, zucchini, and pasta. Continue simmering until the vegetables are tender, about 15 minutes.

7. Season to your liking with salt and pepper.
